I think the below answers sum it up nicely, you just can't skip meals in the world of bodybuilding. if you want to grow you have to eat alot!
there is no point busting you butt in the gym if you are going to waste it by not eating enough.

There is no way around the meal part, you have to eat every two hours or so to keep your body in an anabolic state and stop it from breaking down muscle tissue to get the amino acids it needs.

you can prepare all your meals for the week on your days off and then freeze them.

Brother if you are not going to eat enough there is no point on working out! I would suggest that you do some reading about meal replacements and protein shakes as they can replace a meal and your don't have to prepare anything and they fit anywhere.
